    Special Issue on Food Sensory Analysis


    The sensory analysis of food is an interdisciplinary scientific discipline that uses the human senses to analyze foods for properties such as taste, flavor and texture. It is used in evaluating the product quality, solving problems and new product R&D.


    In this special issue, we intend to invite front-line researchers and authors to submit original research and review articles on exploring Food Sensory Analysis. Potential topics include, but are not limited to:

    • Sensory analysis techniques
    • New products developing
    • Descriptive sensory analysis
    • Consumer preference
    • Product assessment
    • Quality control

    Authors should read over the journal’s For Authors carefully before submission. Prospective authors should submit an electronic copy of their complete manuscript through the journal’s Paper Submission System.


    Please kindly specify the “Special Issue” under your manuscript title. The research field “Special Issue - Food Sensory Analysis” should be selected during your submission.
