Abstract: chitosan is the only alkaline natural polysaccharide, which expresses good bioactivities. In this paper, chitosan was modified with pyruvic acid to get N-carboxyethyl chitosan (N-CE-CTS) which was supposed to have better solubility and bioactivities than chitosan. N-CE-CTS with DS 40.1% dissolves in water. Antioxidant activity was measured with electron spinning resonance (ESR). The results show that N-CE-CTS has better antioxidant activity than chitosan. The antioxidant activity of 2 mg/mL N-CE-CTS and chitosan is 35.0% and 30.1%, respectively. N-CE-CTS has good antibacterial activity against Staphylococcus aureus and Escherichia coli. However antibacterial activity of N-CE-CTS is a little lower than that of chitosan. Antioxidant and antibacterial activity of N-CE-CTS and chitosan increase with the increase of concentration of N-CE-CTS and chitosan.
