    Special Issue on Antioxidants in Food


    Antioxidants play an important role in overall health. They are natural compounds found in some foods that help neutralize free radicals in our bodies. Oxidation is a chemical reaction that transfers electrons from substances to oxidants, in the progress of which free radicals can be generated. Free radicals will attack the fats, protein and the DNA in our cells, which can cause different types of diseases and accelerate the aging process. Antioxidants can remove free radicals, terminate chain reactions and inhibit other oxidation reactions.


    In this special issue, we intend to invite front-line researchers and authors to submit original researches and review articles on exploring antioxidants in food. Potential topics include, but are not limited to:

    • Antioxidant-rich foods
    • Free radicals and antioxidant
    • The role of oxidative stress in the pathophysiology
    • Health effects of antioxidant
    • Antioxidants and disease prevention
    • Antioxidant supplements
    • Potential hazards of antioxidants
    • Exploitation of natural antioxidants
    • Practical applications

    Authors should read over the journal’s For Authors carefully before submission. Prospective authors should submit an electronic copy of their complete manuscript through the journal’s Paper Submission System.


    Please kindly notice that the “Special Issue” under your manuscript title is supposed to be specified and the research field “Special Issue – Antioxidants in Food” should be chosen during your submission.
